Lotus Of Siam Comes To Red Rock Casino Resort and Spa
Famed restaurant Lotus of Siam is opening its third location in Red Rock Casino Resort and Spa. Known for its delicious, authentic Northern Thai cuisine, the restaurant has seen incredible growth since it first opened its doors. Now they’re getting a whole new makeover and not one, not two, but THREE locations!
Like so many legends, Lotus of Siam has humble beginnings. The restaurant first opened its doors in Norwalk, Los Angeles in 1994, but eventually relocated to a simpler area — Commercial Center in Las Vegas in 1999. Its second location on Flamingo Road opened in 2017.
With recipes passed down for centuries and prepared for a new generation, Chef Saipin Chutima and her husband, Bill, transformed the face of Thai cuisine in the United States. Hearty herbs and spices characterize this “Northern” style of cooking, according to the restaurant’s website, a far cry from the sweet, tangy Bangkok style that had dominated before.
Before all of the awards, the restaurant was a hole-in-the-wall establishment, a well-kept local secret. With time and some truly delectable food, chef Saipin forged her own path and created one of the most beloved eateries in the city. After receiving its well-deserved accolades, it has reached national notoriety and acclaim.
Now, this family-owned business is gearing up for the next chapter.
Lotus of Siam has long been a staple of the Las Vegas community. It briefly shut its doors in 2020 — but it’s back and better than ever! With the help of Bua Food Group and direction from Penny Chutima, co-owner and Chef Saipin’s daughter, the restaurant is slowly expanding.
“We’re growing organically, not forcing ourselves to grow,” Chutima told the Las Vegas Review-Journal. “We wanted to get this right.”
