Springtime is the season for new beginnings, and right now is the perfect time to take stock of some of the newest food and beverage options around Las Vegas. Make plans to visit these fresh destinations as soon as possible.

Vanderpump à Paris (702.946.4217) recently made its debut at Paris Las Vegas, the second Strip establishment from Southern California restaurateurs and reality TV stars Lisa Vanderpump and Ken Todd. Beautifully and ornately designed by Vanderpump and Nick Alain, the 200-seat space transports guests to another time and place with a stylish and relaxed atmosphere, which is complemented by a distinctly French wine list, craft cocktails and plenty of rosé and champagne. The food menu includes light bites and more substantial plates ranging from ratatouille frites and a trio of tartares to decadent French onion mac and cheese and more.

Slater’s 50/50 (702.625.5050), recently opened in the Summerlin area. Known for its unique blend of half ground beef and half bacon in its juicy, flavorful burger patties, Slater’s has added an over-the-top signature to the menu that was featured on the Netflix series Fresh, Fried and Crispy. The Whale Burger adds a fried lobster tail, three gold-dusted bacon strips, truffle cheese, arugula, bacon jam and roasted garlic aioli to a one-pound wagyu beef burger, truly an epic meal.

Back on the Strip at Harrah’s Las Vegas, Walk-On’s Sports Bistreaux (702.693.6111), a family-friendly sports bar and grill with a Louisiana-inspired menu, has arrived just upstairs from the main casino floor. Crawfish étouffée, chicken and waffles, and duck and andouille gumbo add spice while burgers, salads, wraps and other familiar dishes make sure there’s something for everyone. No one will want to skip the Krispy Kreme Donut bread pudding at Walk-On’s.

One of the valley’s longtime favorites for Mexican food and cold beer has opened a new location in the neighborhood where it first got started. Nacho Daddy (702.206.5904) is back in Henderson, adding another lively destination to go with its bar-restaurant spots on the Strip at the Miracle Mile Shops, downtown and on the westside. Keep this place in mind for your next Taco Tuesday party or for a happy hour gathering any day of the week.

Nearby at Green Valley Ranch Resort, the seasonal Spring at the Terrace outdoor lounge offering in the Backyard (702.617.6800) has relaunched just in time to be paired with beautiful weather. Take a seat at your table or private mini greenhouse in this botanical garden pop-up environment and enjoy cocktails or a rosé flight along with small plates like tuna tartare with avocado and sesame ginger dressing, a platter of crisp veggies with baba ghanoush and Greek yogurt raita, or sweet little bites including spring madeleines with florally inspired flavors.

Sahara Las Vegas continues to add innovative cuisine to its dining portfolio and the latest must-try is The Noodle Den (702.761.7000), a thoughtful evolution of the classic casino noodle bar. Hearty soups, savory Chinese barbecue, and authentic handmade noodles and dumplings star on this menu, specifically featuring Lanzhou beef hand-pulled noodle soup, Mongolian beef stir-fry with knife-sliced noodles, and crab and pork xiao long bao dumplings. Roast duck fried rice with XO sauce and chicken dan dan noodles are among our favorite dishes so far at this hidden gem on the Strip.
