BrewDog Brings Elevated Menu to New Heights in Las Vegas

The newest BrewDog restaurant, perched atop the Showcase Mall on Las Vegas Boulevard, is the largest—and perhaps most visible—of all the chain’s dozens of locations across the United States and the United Kingdom.

The multi-level restaurant, featuring a farm-to-table comfort food menu and 96 beers on tap, includes a 30,000-square-foot rooftop bar, over which towers a 30-foot illuminated BrewDog sign. Visitors from both the rooftop bar and inside the restaurant get 360-degree views of the Las Vegas Strip, directly overlooking the MGM New York, New York casino.

Known for its craft beer selection, many of which are brewed in its Columbus, Ohio, brewery, BrewDog will also feature several local brews at the Las Vegas location, including beers from Lovelady Brewing, Able Baker Brewing and others, said Chad Crooks, director of food for BrewDog Las Vegas.

The Las Vegas location will also offer exclusive food and beverage items, including “the strongest beer on the Strip,” called The Haus Always Wins, he said, describing it as a 27 percent ABV (alcohol by volume), freeze-distilled beer.

The food menu features the $150 Wagyu Burger, a purebred 8-ounce wagyu beef patty, topped with caramelized onions, six-year matured cheddar and freshly grated Italian black truffle.

The dish is “presented tableside in typical Vegas flair guests are sure to enjoy,” said Crooks.

Other menu highlights include The Flying Scotsman, featuring an 8-ounce beef patty, authentic Scottish haggis, red onion rings and side of peppercorn sauce; Lobster Mac ’N’ Cheese, with fresh steamed lobster, lobster bisque sauce, house-made baby rigatoni with grilled garlic and herb toast, and Oak-Fired Chicken, a 24-hour house-marinated chicken cooked over fire with a choice of sauces. The menu also includes a variety of pizzas, sharable plates, and a handful of other higher-end oak-fired items, including a Seafood Plate, a One-Pound Ribeye, and Gunpower Shrimp, featuring spicy king shrimp, prawn crackers, hot chili sauce, and ponzu dip.

About half of BrewDog’s menu offers plant-based alternatives, including a Carolina Chicken made with a crispy TiNDLE chicken burger, heirloom tomato, red onion, and Carolina mustard barbecue sauce, and a Plant-Based Cheeseburger, made with a smashed Beyond Meat patty, double cheese, heirloom tomato, lettuce, and burger sauce.

BrewDog is also known for its iconic Giant Beer Pretzel, served with beer cheese and honey mustard dips, Crooks said.

The Las Vegas location also “demonstrates BrewDog’s commitment to sustainability,” with a carbon-negative footprint, he said.

BrewDog, based in Ellon, Scotland, has always had protecting the environment as a core element of its mission, and recently stated that it is a Positive Planet Certified Carbon Negative company.

In addition to its bars and restaurants across the U.S and the U.K., BrewDog also operates three DogHouse boutique hotels and two BrewDog Kennels, which the company describes as mini-hotel apartments.
